Tis the season! The holiday season may look different from others but we can still add a little cheer with these soft, spicy gingerbread cookies! Enjoy with a cup of eggnog or hot cocoa and have yourself a little celebration!

 

Ingredients
3 c all-purpose flour
1 t baking soda
1 T corn starch
¼ t salt
1 T ginger
½ t cinnamon
½ t allspice
¼ t black pepper
6 T butter at room temperature
1 egg
¾ c brown sugar
2 t vanilla
¾ c molasses

Directions

Preheat oven to 350 degrees.

In a small bowl sift together the flour, baking soda, corn starch, salt, ginger, cinnamon, allspice, and pepper. In a larger mixing bowl, blend the butter, egg, and brown sugar until smooth. Blend in the vanilla and molasses. Gradually add in the dry mixture. Form the dough into 2 discs, wrap in plastic wrap, and refrigerate for at least 3 hours.



Once dough has been chilled, on a well-floured surface, roll the dough, one disc at a time, until you reach about ¼ inch thickness. Cut out your favorite shapes. Bake on cookie sheet covered in parchment paper for 9-10 minutes (depending on the size of your cookie cutters).

Decorate with your favorite icing. Enjoy!
